It's not a solution and I haven't checked it myself, but for a little bit of information.
There is an article that explains the same information as @WESUEK, but
There is no information to change the folder in this article.
Launch the Microsoft Store app in Windows 10 from the command line or batch

However, I haven't checked it myself.

Let me say fromt, I use a standardone machine so am not possible to experience with network redirection.
But when the Camera Roll folder's location is changed, a new registry value is created under:
HKEY_CURRENT_USER\Software\Microsoft\Windows\CurrentVersion\Explorer\User Shell Folders
The value name would be: {AB5FB87B-7CE2-4F83-915D-550846C9537B}
and its data would be the path to your Camera Roll folder.
You might check to see if these values exist on both the working and non-working machines.

This is a Google translation.
Well, I can't try network redirection because I use a standalone machine.
However, if the location of the Camera Roll folder changes, a new registry value is created in the following location:
HKEY_CURRENT_USER\Software\Microsoft\Windows\CurrentVersion\Explorer\User Shell Folders
The name of the value is as follows:{AB5FB87B-7CE2-4F83-915D-550846C9537B}
The data will be the path to the Camera Roll folder.
Verify that these values are present on both running and non-running machines.
