As for the question as it is, Monaca doesn't know how to change the icon of the project itself.
Log in to Monaca and
for "All Projects" on the dashboard
This is an image of the left side of each project name.

config→iOS App Setting→Icon
In , I uploaded it and it was changed.
Uploading ICON and updating it on Android or Windows will probably replace it.
