I'd like to show the fish tank from the top with a camera and track the location of the fish from the image, but what kind of method is appropriate?
I tried hsv conversion using opencv and tracked it with that color, but it didn't work very well because it became unstable due to the amount of light and it didn't recognize it when it went into the shadow.
I would appreciate it if you could let me know if there is any good way.

That's exactly what I did in my graduation research.

Image processing is an engineering that deals with real-world things, so knowledge of real-world things, such as hardware, is more important than software.
General answers are difficult, but
For example, basic knowledge of photography techniques such as how to arrange cameras and objects, how to choose cameras and lenses, and how to illuminate.
Furthermore, if you want to observe fish, your knowledge of the habits and breeding of the fish is also important.
